generally speaking the centre shuts half an hour to an hour after the shops shut ... that's to leave time for people to finish their purchases, and for staff to close the premises and make their way to the exits ... I don't know the specific shopping centre you mention but I would expect that most if not all the shops would be shut by 6pm ... some might even shut at 5pm or 5.30pm
References :
I don't know that specific centre, but in the UK most will start shutting before the closing time.

Some (mostly smaller) shops may shut at 5pm or 6pm regardless of the centre closing times.

A shop that is open until 7pm will probably start rolling the shutters a few minutes before. If they can, they'll close all but a tiny doorway for people to exit from and will dissuade people from entering from about 5 minutes before closing.

The shopping centre may itself do something similar, but in general you can usually still get into (and out of) a shopping centre for 30-60 minutes after it "shuts".

However, some shops may still serve customers after the centre is officially shut. It really depends on the company and the staff, and may in turn vary from day to day depending on random factors such as whether they have a "works do" (party) that night or whether their manager is on-site.

In short, don't count on being able to start shopping at a particular store after 6:50, and double-check the store opening hours if you really need something between 6 and 7.
References :
Usually new entry may not be permitted after that - but those in the Q inside a shop may not be thrown out.
