If they can, they'll close all but a tiny doorway for people to exit from and will dissuade people from entering from about 5 minutes before closing. The shopping centre may itself do something similar, but in general you can usually still get into (and out of) a shopping centre for 30-60 minutes after it "shuts". However, some shops may still serve customers after the centre is officially shut. It really depends on the company and the staff, and may in turn vary from day to day depending on random factors such as whether they have a "works do" (party) that night or whether their manager is on-site.
